I’m always looking for tantalizing Meatless Meals to add to my Menu Repertoire. We know that meat, particularly beef and pork, are big culprits in increasing cholesterol, any way of adding additional vegetarian options to our diet is a plus. This is one you may want to add to your collection: it’s nutritious, easy, economical and REALLY TASTY!!
Red Hot Beans and Rice
1 T. + 1 teaspoon Olive or Vegetable oil, (or substitute water)
1 cup chopped onion
1 cup chopped green pepper
2 Garlic cloves, crushed
1 cup fresh chopped Tomatoes
8 oz. drained, rinsed, cooked Red Kidney Beans
1 Cup Corn kernels, (fresh is best)
1 cup sliced Mushrooms
1 ½ cups Tomato Sauce
¼ Teas. Salt
¼ teas. Ground Red Pepper
¼ teas. Ground Cumin
2 cups cooked Brown Rice
¼ cup Sour Cream (low fat)
1. In a large non-stick skillet, heat oil, (or substitute a small amount of water to prevent sticking), add onion, bell pepper, and garlic. Cook, stirring occasionally, 5 minutes until vegetables are just tender.
2. 2. Add tomatoes, beans, corn, mushrooms, tomato sauce, salt, red pepper and cumin, and stir to combine. Simmer uncovered 10 minutes.
3. To serve, spread rice on a serving platter, mounding edges slightly. Spoon beans mixture into center of rice, top with sour cream.
